Tomato Basil Quiche

 

Tomato Basil Quiche Ingredients

  • Store bought pie crust from freezer section

  • 1 shallot - sliced 

  • 1 cup cherry tomatoes

  • 1 tablespoon olive oil 

  • 1 cup gruyere cheese - shredded

  • 1/2 cup Parmesan cheese - shredded

  • 1/4 cup fresh basil

  • 1/2 heavy cream 

  • 4 eggs 

  • Salt + pepper to taste 

Directions

  • Preheat oven to 400F

  • Cook pie crust for 8 minutes

  • Place cherry tomatoes and shallots on a baking sheet and coat with olive oil

  • Season with salt and pepper, then cook for 15 minutes

  • Mix eggs, heavy cream, salt and pepper

  • Place 1/2 tomatoes and shallots on bottom of pie crust

  • Place Gruyère and Parmesan cheese on the tomatoes

  • Sprinkle with 1/2 of the basil

  • Pour egg mixture over the top

  • Sprinkle with the remaining tomatoes, shallots, and basil

  • Place quiche on a baking pan and cook in the oven for 30 minutes

  • Enjoy!
