Tomato Basil Quiche
Tomato Basil Quiche Ingredients
Store bought pie crust from freezer section
1 shallot - sliced
1 cup cherry tomatoes
1 tablespoon olive oil
1 cup gruyere cheese - shredded
1/2 cup Parmesan cheese - shredded
1/4 cup fresh basil
1/2 heavy cream
4 eggs
Salt + pepper to taste
Directions
Preheat oven to 400F
Cook pie crust for 8 minutes
Place cherry tomatoes and shallots on a baking sheet and coat with olive oil
Season with salt and pepper, then cook for 15 minutes
Mix eggs, heavy cream, salt and pepper
Place 1/2 tomatoes and shallots on bottom of pie crust
Place Gruyère and Parmesan cheese on the tomatoes
Sprinkle with 1/2 of the basil
Pour egg mixture over the top
Sprinkle with the remaining tomatoes, shallots, and basil
Place quiche on a baking pan and cook in the oven for 30 minutes
