High Protein Keto Cottage Cheese Parmesan Crisp Chicken Veggie Casserole Ingredients
1 lb chicken
1 head broccoli - chopped
1 head cauliflower - chopped
2 tablespoons olive oil
Onion - diced
1 tablespoon minced garlic
6 ounce bag of fresh spinach
1 cup cottage cheese - blended
2 eggs
1/2 cup shredded cheddar cheese
1/4 tsp red pepper flakes
1/2 tsp basil
1 tsp parsley
1/2 cup parmesan crisps
Directions
Preheat oven to 400F
Place chicken in glass pan
Place chopped broccoli and cauliflower on a cookie sheet drizzled with olive oil
Cook both at the same time for 20 minutes
Shred chicken with forks
While the chicken and veggies are cooking, heat 1 tablespoon olive oil in sauce pan
Add diced onion, minced garlic to pan and cook for 2 minutes
Add 6oz bag fresh spinach and cook for another 2 minutes until spinach wilts
Take all cooked ingredients and add to a large bowl
Add blended cottage cheese, eggs. red pepper flakes, basil, and parsley to bowl and mix well
Place mixed combination into glass baking pan
Top with Parmesan crisps and shredded cheddar cheese and cook for 10-15 minutes at 400F
