High Protein Keto Cottage Cheese Parmesan Crisp Chicken Veggie Casserole Ingredients

  • 1 lb chicken

  • 1 head broccoli - chopped

  • 1 head cauliflower - chopped

  • 2 tablespoons olive oil

  • Onion - diced

  • 1 tablespoon minced garlic

  • 6 ounce bag of fresh spinach

  • 1 cup cottage cheese - blended

  • 2 eggs

  • 1/2 cup shredded cheddar cheese

  • 1/4 tsp red pepper flakes

  • 1/2 tsp basil

  • 1 tsp parsley

  • 1/2 cup parmesan crisps

Directions

  • Preheat oven to 400F

  • Place chicken in glass pan

  • Place chopped broccoli and cauliflower on a cookie sheet drizzled with olive oil

  • Cook both at the same time for 20 minutes

  • Shred chicken with forks

  • While the chicken and veggies are cooking, heat 1 tablespoon olive oil in sauce pan

  • Add diced onion, minced garlic to pan and cook for 2 minutes

  • Add 6oz bag fresh spinach and cook for another 2 minutes until spinach wilts

  • Take all cooked ingredients and add to a large bowl

  • Add blended cottage cheese, eggs. red pepper flakes, basil, and parsley to bowl and mix well

  • Place mixed combination into glass baking pan

  • Top with Parmesan crisps and shredded cheddar cheese and cook for 10-15 minutes at 400F

  • Enjoy!
