1 Pan Easy Cashew Chicken Bake Ingredients

  • 1 lb chicken breast tenders boneless skinless - cut into bite size pieces 

  • Produce

    • 1 red, orange, and yellow bell pepper - cut into bit size pieces 

    • 4 cloves garlic - minced 

    • 1 tsp ginger - freshly grated

    • 1/4 cup red onion - diced

    • 1/4 cup green onion - chopped

    • 1/2 cup raw unsalted cashews 

    • Sesame seeds for garnish

  • Sauce:

    • 1 tbsp Rice wine vinegar

    • 1 tbsp toasted Sesame oil

    • 2 tbsp Honey

    • 1/4 cup coconut aminos 

Directions

  • Preheat oven to 425F

  • Mix all ingredients to make the sauce

  • Place peppers and onion on baking sheet

  • Pour 1/2 of the sauce on top and cook for 15 minutes

  • Place chicken and cashews on baking sheet with the peppers, add remaining sauce, cook for another 15 minute

  • Garnish with green onions and sesame seeds

  • Serve over brown rice

  • Enjoy!
