New Year High Protein Good Luck Casserole Ingredients - 4 Servings
4 cups shredded collard greens
1 can black beans - rinsed and drained
4 sliced bacon cooked in microwave for 5 minutes - crumbled
1 lb shredded chicken
Dash of garlic powder
Dash of cayenne pepper
1/4 green onion - Diced
1.5 cups cheddar cheese - shredded
1 bag Banza rice
1 tablespoon olive oil
Directions
Preheat oven to 350F
Cook rice per package directions
Heat olive oil in pan, add shredded collard greens and cook for 2 to 3 minutes
You can use rotisserie chicken or I cook my tenders in the oven at 400F for 20 minutes, then shred.
Add cooked rice, collard greens, shredded chicken, crumbled bacon, 1/2 cup cheese, black eyed peas, and seasoning to casserole dish, then mix well
Top with 1 cup shredded cheddar cheese and green onions
Cook for 20 min at 350F
