New Year High Protein Good Luck Casserole Ingredients - 4 Servings

  • 4 cups shredded collard greens 

  • 1 can black beans - rinsed and drained 

  • 4 sliced bacon cooked in microwave for 5 minutes - crumbled

  • 1 lb shredded chicken 

  • Dash of garlic powder

  • Dash of cayenne pepper

  • 1/4 green onion - Diced 

  • 1.5 cups cheddar cheese - shredded

  • 1 bag Banza rice 

  • 1 tablespoon olive oil

Directions

  • Preheat oven to 350F

  • Cook rice per package directions

  • Heat olive oil in pan, add shredded collard greens and cook for 2 to 3 minutes

  • You can use rotisserie chicken or I cook my tenders in the oven at 400F for 20 minutes, then shred.

  • Add cooked rice, collard greens, shredded chicken, crumbled bacon, 1/2 cup cheese, black eyed peas, and seasoning to casserole dish, then mix well

  • Top with 1 cup shredded cheddar cheese and green onions 

  • Cook for 20 min at 350F

  • Enjoy!
