High Protein Mexican Street Corn Casserole Ingredients

  • 1/2 cup Greek yogurt

  • 1/4 cup whipped cream cheese

  • 1 can sweet corn - drained

  • 1 lb chicken tenders

  • 2 tablespoons taco seasoning

  • 1 lime - squeezed

  • 1/4 cup Cojita cheese

Directions

  • Preheat oven to 400F

  • Mix Greek yogurt, cream cheese, sweet corn, taco seasoning, and lime juice

  • Place chicken in a baking dish and top chicken with mixture

  • Sprinkle Cojita cheese over top

  • Cook for 20 minutes

  • Enjoy!
