Mexican Chicken Salad
Mexican Chicken Salad Ingredients - 4 Servings
1 lb cooked shredded chicken
1 cup black beans - rinsed and drained
1 cup corn - drained
1/4 cup jalapenos - chopped
1/2 cup cherry tomatoes - chopped
1/4 cup red onion - chopped
1/4 cup pepitas
Dressing
1/4 cup lime juice
1/2 cup mayo
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon salt
Directions
Preheat oven to 400F
Cook chicken for 25 minutes and then shred chicken
Add all of the ingredients for the dressing into a bowl and mix well
In a large bowl add the shredded chicken, black beans, corn, jalapeños, tomatoes, red onion, and pepitas
Pour the dressing over the ingredients, then mix well
Serve on rice cakes, in a sandwich, or over lettuce
