Mexican Chicken Salad

 

Mexican Chicken Salad Ingredients - 4 Servings

  • 1 lb cooked shredded chicken

  • 1 cup black beans - rinsed and drained

  • 1 cup corn - drained

  • 1/4 cup jalapenos - chopped

  • 1/2 cup cherry tomatoes - chopped

  • 1/4 cup red onion - chopped

  • 1/4 cup pepitas

  • Dressing

    • 1/4 cup lime juice

    • 1/2 cup mayo

    • 1 tablespoon chili powder

    • 1 teaspoon garlic powder

    • 1 teaspoon cumin

    • 1/4 teaspoon paprika

    • 1/4 teaspoon salt

Directions

  • Preheat oven to 400F

  • Cook chicken for 25 minutes and then shred chicken

  • Add all of the ingredients for the dressing into a bowl and mix well

  • In a large bowl add the shredded chicken, black beans, corn, jalapeños, tomatoes, red onion, and pepitas

  • Pour the dressing over the ingredients, then mix well

  • Serve on rice cakes, in a sandwich, or over lettuce

  • Enjoy!
