High Protein Lower Carb Mexican Lime Pasta Salad Ingredients - 4 Servings

  • 1 avocado - diced

  • 1 cup cherry tomatoes - diced

  • 2 tbsp parsley

  • 1 cup corn

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tablespoons lime juice - fresh

  • 1/4 tsp cayenne

  • 1/4 cup Cotija cheese

  • 1/2 cup Greek yogurt - plain

  • Banza pasta 8oz shells

Directions

  • Cook pasta package directions, then drain and rinse

  • Add tomatoes, avocado, and tomatoes to pasta

  • Mix lime juice, all spices, and Greek yogurt together

  • Add to pasta

  • Add Cojita cheese

  • Enjoy!
