High Protein Lower Carb Mexican Lime Pasta Salad Ingredients - 4 Servings
1 avocado - diced
1 cup cherry tomatoes - diced
2 tbsp parsley
1 cup corn
1 tsp garlic powder
1 tsp onion powder
2 tablespoons lime juice - fresh
1/4 tsp cayenne
1/4 cup Cotija cheese
1/2 cup Greek yogurt - plain
Banza pasta 8oz shells
Directions
Cook pasta package directions, then drain and rinse
Add tomatoes, avocado, and tomatoes to pasta
Mix lime juice, all spices, and Greek yogurt together
Add to pasta
Add Cojita cheese
