Keto Friendly Chicken Enchiladas Ingredients
1 pound chicken - cooked
1 tbsp low sodium taco seasoning
1/4 cup salsa verde
1 small can green chiles
(8) low carb flour tortillas - you can use less tortillas and add more to the tortillas to fill the space
1/2 cup green enchilada sauce
1/4 cup sour cream
1 cup Monterey Jack cheese
Directions
Preheat oven to 350F
Place cooked shredded chicken (I cooked mine in the oven at 350 for 35 minutes. You can also use rotisserie chicken), taco seasoning, salsa verde and green chiles in a bowl and mix well
Grease 9x13 pan and pour half of the green enchilada sauce into the bottom of the pan
Spread about a tablespoon of sour cream down the center of a tortilla, then spread shredded chicken mixture, and top with a sprinkle of Monterey Jack cheese
Roll and place in pan, then continue process with the next 7 tortillas (They will be a snug fit in a 9x13 pan!)
Top with the remaining green enchilada sauce and sprinkle with cheese
Bake for 30 minutes
