Keto Friendly Chicken Enchiladas Ingredients

  • 1 pound chicken - cooked

  • 1 tbsp low sodium taco seasoning

  • 1/4 cup salsa verde

  • 1 small can green chiles

  • (8) low carb flour tortillas - you can use less tortillas and add more to the tortillas to fill the space

  • 1/2 cup green enchilada sauce

  • 1/4 cup sour cream

  • 1 cup Monterey Jack cheese

Directions

  • Preheat oven to 350F

  • Place cooked shredded chicken (I cooked mine in the oven at 350 for 35 minutes. You can also use rotisserie chicken), taco seasoning, salsa verde and green chiles in a bowl and mix well

  • Grease 9x13 pan and pour half of the green enchilada sauce into the bottom of the pan

  • Spread about a tablespoon of sour cream down the center of a tortilla, then spread shredded chicken mixture, and top with a sprinkle of Monterey Jack cheese

  • Roll and place in pan, then continue process with the next 7 tortillas (They will be a snug fit in a 9x13 pan!)

  • Top with the remaining green enchilada sauce and sprinkle with cheese

  • Bake for 30 minutes

  • Enjoy!
