Keto Brussel Sprout Gratin Ingredients
1 lb brussel sprouts
2 tbsp extra virgin olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 cup heavy cream
1 cup white cheddar - grated
1 cup asiago cheese - grated
Zest of (1) lemon
Directions
Preheat oven to 400F
Slice brussel sprouts in half and then place in cast iron skillet, toss with olive oil, sprinkle with salt and pepper
Bake for 20 minutes
In another bowl, combine heavy cream, cheddar, and lemon zest
Pour mixture over brussel sprouts and then sprinkle with grated asiago
Place in oven and bake for an additional 15 minutes
