Keto Brussel Sprout Gratin Ingredients

  • 1 lb brussel sprouts

  • 2 tbsp extra virgin olive oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 cup heavy cream

  • 1 cup white cheddar - grated

  • 1 cup asiago cheese - grated

  • Zest of (1) lemon

Directions

  • Preheat oven to 400F

  • Slice brussel sprouts in half and then place in cast iron skillet, toss with olive oil, sprinkle with salt and pepper

  • Bake for 20 minutes

  • In another bowl, combine heavy cream, cheddar, and lemon zest

  • Pour mixture over brussel sprouts and then sprinkle with grated asiago

  • Place in oven and bake for an additional 15 minutes

  • Enjoy!
