Autumn Apple Sausage Stuffed Butternut Squash Ingredients

  • Butternut Squash

  • 2 tbsp olive oil - divided

  • Sea salt and black pepper

  • 1 lb turkey sausage

  • 1 yellow onion

  • 2 tbsp garlic - minced

  • 1 tbsp fresh sage leaves - minced (can be dried, fresh not required)

  • 1 tbsp fresh rosemary leaves - minced (can be dried, fresh not required)

  • 1 tbsp fresh thyme leaves - minced (can be dried, fresh not required)

  • 1 cup kale

  • 1 medium honey crisp or pink lady apple - chopped

  • 1/2 cup pecans - chopped

  • 1/4 cup dried cranberries

Directions

  • Preheat oven to 425F and line a large baking sheet with parchment paper

  • Cut butternut squash lengthwise, scoop out the seeds, and then drizzle with 1 tbsp of olive oil, sprinkle generously with salt and pepper

  • Place butternut squash face down on the baking sheet and roast for 35 minutes

  • Heat a large skillet over medium heat and add remaining olive oil

  • Crumble the sausage into the skillet and cook until 3/4 of the way cooked, then add onion and garlic while stiring in for 2 minutes

  • Add in herbs and continue to cook for another minute

  • Add the kale, pecans, applies, and cranberries then cook for 3 minutes

  • Once the squash is done, use a spoon to remove some squash to make room for the mixtures, you can utilize the extra squash for another meal!

  • Spoon the mixture into the squash

  • Enjoy!
