High Protein Cottage Cheese Enchilada Bowl for 4 Ingredients
1 bag microwave cauliflower rice - wringed out after cook with paper towels to remove excess water
1 lb cooked chicken breast - shredded
2 tablespoons olive oil
1 onion - diced
1 green pepper - diced
1 can enchilada sauce
2 tablespoons low sodium taco seasoning
1 cup cottage cheese - blended in blender
1 can green chilis
1 cup freshly grated cheddar cheese
Directions
Preheat oven to 400F
Cook chicken breast in oven for 20 minutes, then shred
Heat olive oil in cast iron skillet on medium heat
Add onions and green pepper, then cook for 5 minutes
Add enchilada sauce, cottage cheese, taco seasoning, green chilis, cooked chicken and mix well
Top with cheese and cook in oven for 10 minutes
Scoop mixture over cauliflower rice and top with toppings
***Optional: jalapeños , pepitas, cilantro, lime, or avocado as a topping
