High Protein Cottage Cheese Enchilada Bowl for 4 Ingredients

  • 1 bag microwave cauliflower rice - wringed out after cook with paper towels to remove excess water

  • 1 lb cooked chicken breast - shredded

  • 2 tablespoons olive oil

  • 1 onion - diced

  • 1 green pepper - diced

  • 1 can enchilada sauce

  • 2 tablespoons low sodium taco seasoning

  • 1 cup cottage cheese - blended in blender

  • 1 can green chilis

  • 1 cup freshly grated cheddar cheese

Directions

  • Preheat oven to 400F

  • Cook chicken breast in oven for 20 minutes, then shred

  • Heat olive oil in cast iron skillet on medium heat

  • Add onions and green pepper, then cook for 5 minutes

  • Add enchilada sauce, cottage cheese, taco seasoning, green chilis, cooked chicken and mix well

  • Top with cheese and cook in oven for 10 minutes

  • Scoop mixture over cauliflower rice and top with toppings

  • ***Optional: jalapeños , pepitas, cilantro, lime, or avocado as a topping

  • Enjoy!
