High Protein Cottage Cheese Egg Salad Ingredients - 5 Servings

  • 1/4 cup shredded carrots

  • 1/4 cup celery - diced

  • 1 tbsp green onion - diced

  • 2 tbsp fresh Parsley

  • 1/4 red onion - diced

  • 10 hard boiled eggs - chopped

  • 1 tbsp whole grain old style mustard

  • 1/2 lemon juice - squeezed

  • 1 /4 tsp salt

  • 1/4 tsp pepper

  • 1 cup cottage cheese - blended

Directions

  • Mix all ingredients together

  • Place mixture on rice cakes

  • Pair with fresh veggies for the perfect meal
