Pineapple Chicken Bowl

 

Pineapple Chicken Bowl Ingredients - 4 Servings

  • 1 lb chicken tenders

  • Sauce:

    • 1/4 cup low sodium soy sauce

    • 1 can diced pineapple - drained

    • 1/4 cup water

    • 3 tablespoons calorie free brown sugar

    • 3 tablespoons rice vinegar

    • 1 teaspoon ginger paste

    • 1 tablespoon minced garlic

    • 2 tsp arrowroot powder to thicken sauce

  • 1 package Banza rice

Directions

  • Preheat oven to 400F

  • Cook chicken in oven for 20 minutes, then shred with a fork

  • While chicken is cooking, cook Banza rice per package directions

  • Also cook sauce in sauce pan on medium low heat while chicken is cooking

  • Add shredded chicken to sauce and turn up the heat to medium and simmer for 2 minutes

  • Divide rice into 4 bowls, top with chicken mixture and sesame seeds

  • Enjoy!
