Pineapple Chicken Bowl
Pineapple Chicken Bowl Ingredients - 4 Servings
1 lb chicken tenders
Sauce:
1/4 cup low sodium soy sauce
1 can diced pineapple - drained
1/4 cup water
3 tablespoons calorie free brown sugar
3 tablespoons rice vinegar
1 teaspoon ginger paste
1 tablespoon minced garlic
2 tsp arrowroot powder to thicken sauce
1 package Banza rice
Directions
Preheat oven to 400F
Cook chicken in oven for 20 minutes, then shred with a fork
While chicken is cooking, cook Banza rice per package directions
Also cook sauce in sauce pan on medium low heat while chicken is cooking
Add shredded chicken to sauce and turn up the heat to medium and simmer for 2 minutes
Divide rice into 4 bowls, top with chicken mixture and sesame seeds
