Healthy Buffalo Chicken & Veggie Casserole Ingredients
1 lb boneless chicken breast tenders - boneless skinless cut into bite size pieces
(2) sweet potatoes - cut into bite size pieces
(1) head broccoli - cut into bite size pieces
(1) cup cheddar cheese - shredded
1/4 cup green onion - chopped
4 slices cooked bacon
Sauce:
1/2 cup Primal Kitchen buffalo sauce
1/8 cup olive oil
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
Directions
Preheat oven to 425F
Grease 9×13 casserole dish
Place sweet potatoes and 1/2 of mixed sauce into casserole dish, then cook for 30 minutes
Add chicken and broccoli to sweet potatoes, then add remainder of the sauce
Cook another 20 minutes
Top with cheddar cheese, green onion, and cooked bacon
Place back in oven for five more minutes
Drizzle ranch and crumbled blue cheese on top
