Healthy Buffalo Chicken & Veggie Casserole Ingredients

  • 1 lb boneless chicken breast tenders - boneless skinless cut into bite size pieces

  • (2) sweet potatoes - cut into bite size pieces

  • (1) head broccoli - cut into bite size pieces

  • (1) cup cheddar cheese - shredded

  • 1/4 cup green onion - chopped

  • 4 slices cooked bacon

  • Sauce:

    • 1/2 cup Primal Kitchen buffalo sauce

    • 1/8 cup olive oil

    • 1/2 tsp salt

    • 1/2 tsp pepper

    • 1 tsp garlic powder

Directions

  • Preheat oven to 425F

  • Grease 9×13 casserole dish

  • Place sweet potatoes and 1/2 of mixed sauce into casserole dish, then cook for 30 minutes

  • Add chicken and broccoli to sweet potatoes, then add remainder of the sauce

  • Cook another 20 minutes

  • Top with cheddar cheese, green onion, and cooked bacon

  • Place back in oven for five more minutes 

  • Drizzle ranch and crumbled blue cheese on top

  • Enjoy!
