Easy Crockpot Chicken Curry

 

Easy Crockpot Chicken Curry Ingredients - 4 Servings

  • 4 chicken thighs bone in - remove skin

  • 2 jalapeños - diced

  • 1 red onion - diced

  • 1 whole garlic bulb - minced

  • 2 cans coconut milk

  • 2 tablespoons curry

  • 2 tablespoons basil

  • 1 tablespoon chili powder

  • 1 tablespoon ginger

  • 1 tablespoon Stevia brown sugar

  • 1 tablespoon olive oil

  • Salt + pepper to taste

  • 1 bag Banza rice

Directions

  • Add olive oil to skillet on medium heat, then cook chicken 2 minutes per side

  • Cook rice per package directions

  • Add all ingredients, minus the chicken, to crockpot and stir well

  • Add chicken, then cover and cook on high for 3 hours

  • Removed chicken and peel the chicken off the of bone

  • Place the chicken back inside your crockpot and mix well

  • Serve over Banza rice for a low carb, high protein meal

  • Enjoy!
