Easy Crockpot Chicken Curry
Easy Crockpot Chicken Curry Ingredients - 4 Servings
4 chicken thighs bone in - remove skin
2 jalapeños - diced
1 red onion - diced
1 whole garlic bulb - minced
2 cans coconut milk
2 tablespoons curry
2 tablespoons basil
1 tablespoon chili powder
1 tablespoon ginger
1 tablespoon Stevia brown sugar
1 tablespoon olive oil
Salt + pepper to taste
1 bag Banza rice
Directions
Add olive oil to skillet on medium heat, then cook chicken 2 minutes per side
Cook rice per package directions
Add all ingredients, minus the chicken, to crockpot and stir well
Add chicken, then cover and cook on high for 3 hours
Removed chicken and peel the chicken off the of bone
Place the chicken back inside your crockpot and mix well
Serve over Banza rice for a low carb, high protein meal
