High Protein Cottage Cheese Queso Taco Salad Ingredients
24 oz cottage cheese container
1 cup freshly grated cheddar cheese (You need to do freshly grated because it melts best in the microwave)
1 lb ground turkey
8oz bag shredded lettuce
1.25 bag low sodium taco seasoning (set aside 1 tablespoon for your queso)
Pico de gallo (OPTIONAL)
Directions
Queso:
Blend cottage cheese in a blender
Add blended cottage cheese, freshly shredded cheddar cheese, and 1 tablespoon of taco seasoning to a bowl
Microwave for 1 minute and mix well
Meat:
Ground meat in skillet
Add 1/3 cup water once the meat is cooked and the rest of the taco seasoning
Heat the queso for another minute and mix well.
To plate your meal:
Put lettuce on the bottom
Add meat on the lettuce
Add queso on top of the meat
Then add pico de gallo on the queso
You can also add fresh jalapenos, avocados, etc. Have fun with it!
This queso would also be amazing on low carb tortillas for the perfect cheesy taco
