Buffalo Bleu Cottage Cheese Chicken Spaghetti Squash Casserole Ingredients

  • 1 lb shredded chicken tenders

  • 1 spaghetti squash cooked and shredded

  • 1 tbsp garlic powder

  • 1/2 cup cottage cheese

  • 1/4 cup Franks’s +2tbsp for garnish

  • 1/2 cup mozzarella cheese

  • 1/4 cup bleu cheese

  • 2 tbsp green onion - chopped

Directions

  • Preheat oven to 400F

  • Cooked chicken and squash in oven

    • Cook chicken for 20 minutes

    • Cook spaghetti squash for 40 minutes

    • Shred chicken and spaghetti squash once cooked

  • While cooking chicken and squash, mix garlic powder, cottage cheese, Frank’s, and mozzarella cheese

  • Add cooked chicken and squash to mixture, and mix well

  • Place mixture in baking dish and top with bleu cheese, green onions, and 2 tablespoons franks

  • Cook on 400F for 10 minutes

  • Garnish with 2 tbsp Frank’s

  • Enjoy!
