Cottage Cheese Veggie Frittata Ingredients

  • 1 tbsp olive oil

  • 1/2 red onion - diced

  • 1 cup fresh mushrooms

  • 1 bundle of fresh asparagus - use heads only

  • 2 garlic cloves - minced

  • 6 ounce bag of fresh spinach

  • 10 eggs

  • 1 cup cottage cheese

  • 1/2 parmesan cheese - grated

  • 2 tbsp chives - chopped

Directions

  • Preheat oven to 375F

  • In cast iron skillet, heat olive oil over medium heat

  • Add mushrooms, onions, and asparagus to preheated skillet, then cook for 5 minutes

  • In large bowl, whisk together eggs, cottage cheese, and parmesan cheese

  • Add spinach and garlic to cast iron and cook for 1 minute

  • Pour egg mixture over the vegetables in skillet, let sit on medium heat for 2 minutes

  • Place in oven for 12 minutes

  • Enjoy!
