Cottage Cheese Veggie Frittata Ingredients
1 tbsp olive oil
1/2 red onion - diced
1 cup fresh mushrooms
1 bundle of fresh asparagus - use heads only
2 garlic cloves - minced
6 ounce bag of fresh spinach
10 eggs
1 cup cottage cheese
1/2 parmesan cheese - grated
2 tbsp chives - chopped
Directions
Preheat oven to 375F
In cast iron skillet, heat olive oil over medium heat
Add mushrooms, onions, and asparagus to preheated skillet, then cook for 5 minutes
In large bowl, whisk together eggs, cottage cheese, and parmesan cheese
Add spinach and garlic to cast iron and cook for 1 minute
Pour egg mixture over the vegetables in skillet, let sit on medium heat for 2 minutes
Place in oven for 12 minutes
