Mediterranean Salmon Zucchini Boats Ingredients
(2) Salmon filets
Salt and pepper to taste
1 can roasted tomatoes - use 1/4 cup
4 zucchinis - sliced in half length wise
4 tbsp basil pesto
4 tbsp red pepper hummus
1/4 cup Kalamata Olives
4 tbsp feta cheese
Directions
Preheat oven to 400F
Add salt and pepper to salmon, then cook for 18 minutes
Scoop inside of zucchini halves out to make room for the filling
Layer boats with hummus, pesto, tomatoes, olives, cooked salmon diced, and feta
Cook boats in oven for 12 minutes
