Mediterranean Salmon Zucchini Boats Ingredients

  • (2) Salmon filets

  • Salt and pepper to taste

  • 1 can roasted tomatoes - use 1/4 cup

  • 4 zucchinis - sliced in half length wise

  • 4 tbsp basil pesto

  • 4 tbsp red pepper hummus

  • 1/4 cup Kalamata Olives

  • 4 tbsp feta cheese

Directions

  • Preheat oven to 400F

  • Add salt and pepper to salmon, then cook for 18 minutes

  • Scoop inside of zucchini halves out to make room for the filling

  • Layer boats with hummus, pesto, tomatoes, olives, cooked salmon diced, and feta

  • Cook boats in oven for 12 minutes

  • Enjoy!
