Teriyaki Protein Yum Yum Bowl

 

Teriyaki Protein Yum Yum Bowl Ingredients - Makes 4 Servings

  • 1 lb extra lean ground beef

  • 1 tbsp olive oil

  • 1 zucchini - chopped

  • 6 ounces fresh slice mushrooms - baby bella

  • 1 garlic clove - minced

  • 1/2 cup Primal Kitchen Teriyaki sauce

  • 2 tbsp Kewpie Mayonnaise

  • 1 tbsp honey

  • 1 tbsp Sriracha

  • 1 tbsp rice vinegar

  • 1/2 tsp garlic powder

  • 1 bag Banza rice

  • 2 tbsp green onions - diced

Directions

  • Cook Banza rice per package directions

  • Heat sauce pan and add olive oil

  • Cook meat in heated pan

  • Once cooked, move meat to side of pan and add zucchini, mushrooms, and minced garlic, then cook for 5 minutes

  • Add teriyaki sauce, mix well, and simmer for 10 minutes

  • For Yum Yum sauce:

    • Mix mayo, sriracha, honey, rice vinegar, and garlic powder

  • Layer bowl starting with rice, meat mixture, drizzle Yum Yum sauce, and then top with green onions

  • Enjoy!
