Winter Wonderland High Protein Low Carb Pasta Salad Ingredients
1 rotini Banza pasta
1 tbsp olive oil
1 cup cubed butternut squash
1 lb brussel sprouts, top trimmed, and halved
1 tsp ground cinnamon
½ tsp ground nutmeg
6 oz spinach
6 oz goat cheese - crumbled
¼ cup toasted pine nuts
For the Sauce
4 tbsp salted butter
1 shallot - chopped
4 garlic cloves - minced
1 tbsp marjoram leaves
1/4 olive oil
Juice of lemon
Zest of 1 lemon
Directions
Preheat oven to 350F
Cook pasta according to package directions
Drizzle olive oil on brussels and butternut squash
Roast for 30 minutes
The last 10 minutes roast the pine nuts on a separate baking sheet in the oven
For the sauce:
Melt the butter over medium heat
Add the shallot, garlic, and marjoram and cook 1 minute
Add the olive oil and lemon juice and lemon zest
Keep the sauce in the skillet on medium heat and add the spinach cook for 3 minutes
Add the drained pasta and vegetables, mix well
Sprinkle pine nuts and goat cheese on top
