Veggie Chili Cheese Fries

 

Veggie Chili Cheese Fries Ingredients - 4 Servings

  • 1 tablespoon olive oil

  • 1 orange bell pepper - diced

  • 1 yellow onion - diced

  • 1 lb ground turkey

  • 1 rutabaga - peeled & cut into “fries”

  • 1/2 cup shredded cheddar cheese

  • 2 cans fire roasted tomatoes - drained

  • 1 tablespoon minced garlic

  • 1 tablespoon chili powder

  • 1 tablespoon smoked paprika

  • 2 tsp ground cumin

  • 2 tsp dried oregano

  • 1 tsp unsweetened cocoa powder

  • 1/2 tsp cinnamon

Directions

  • Preheat oven to 375F

  • Place rutabaga on a cookie sheet layered with parchment paper

  • Spray with cooking spray

  • Lay rutabaga down on parchment paper, spray with cooking spray, and sprinkle with salt

  • Cook in oven for 25 minutes - flip rutabaga then cook for another 10 minutes

  • While rutabaga is cooking, heat olive oil on medium heat in skillet

  • Cook pepper and onion for 5 minutes

  • Add garlic and push to the side of the pan

  • Add ground turkey and cook for 5 minutes

  • Once ground turkey is cooked add tomatoes and spices

  • Mix well and simmer on medium heat for 5 minutes

  • Add veggie fries to your plate and top with chili and cheese

  • Enjoy!
