Veggie Chili Cheese Fries
Veggie Chili Cheese Fries Ingredients - 4 Servings
1 tablespoon olive oil
1 orange bell pepper - diced
1 yellow onion - diced
1 lb ground turkey
1 rutabaga - peeled & cut into “fries”
1/2 cup shredded cheddar cheese
2 cans fire roasted tomatoes - drained
1 tablespoon minced garlic
1 tablespoon chili powder
1 tablespoon smoked paprika
2 tsp ground cumin
2 tsp dried oregano
1 tsp unsweetened cocoa powder
1/2 tsp cinnamon
Directions
Preheat oven to 375F
Place rutabaga on a cookie sheet layered with parchment paper
Spray with cooking spray
Lay rutabaga down on parchment paper, spray with cooking spray, and sprinkle with salt
Cook in oven for 25 minutes - flip rutabaga then cook for another 10 minutes
While rutabaga is cooking, heat olive oil on medium heat in skillet
Cook pepper and onion for 5 minutes
Add garlic and push to the side of the pan
Add ground turkey and cook for 5 minutes
Once ground turkey is cooked add tomatoes and spices
Mix well and simmer on medium heat for 5 minutes
Add veggie fries to your plate and top with chili and cheese
