High Protein Cottage Cheese Curry Stuffed Sweet Potato for Two Ingredients
1 sweet potato
1/2 lb chicken tenders
1 head broccoli
1 can Rotel - drained
1 tablespoon curry powder
1 cup cottage cheese - blended in blender
1 tablespoon olive oil
Directions
Preheat oven to 425F
Stab potatoes with fork, then place on lined baking dish and cook for 50 minutes
On another lined baking sheet, add chicken tenders
Roast at 425 for 20 minutes
Shred chicken with 2 forks
Add olive oil to sauce pan on medium and add chopped broccoli heads
Cover for 5 minutes
Blend cottage cheese
Add cooked shredded chicken, Rotel, blended cottage cheese, and curry powder to your broccoli
Mix well and simmer on low
Cut sweet potato in 1/2, then top sweet potatoes with chicken mixture
