High Protein Cottage Cheese Curry Stuffed Sweet Potato for Two Ingredients

  • 1 sweet potato

  • 1/2 lb chicken tenders

  • 1 head broccoli

  • 1 can Rotel - drained

  • 1 tablespoon curry powder

  • 1 cup cottage cheese - blended in blender

  • 1 tablespoon olive oil 

Directions

  • Preheat oven to 425F

  • Stab potatoes with fork, then place on lined baking dish and cook for 50 minutes

  • On another lined baking sheet, add chicken tenders

  • Roast at 425 for 20 minutes

  • Shred chicken with 2 forks

  • Add olive oil to sauce pan on medium and add chopped broccoli heads

  • Cover for 5 minutes

  • Blend cottage cheese

  • Add cooked shredded chicken, Rotel, blended cottage cheese, and curry powder to your broccoli

  • Mix well and simmer on low

  • Cut sweet potato in 1/2, then top sweet potatoes with chicken mixture

  • Enjoy!
