Thai Salad
Thai Salad Ingredients - Serves 4
Realgood Chicken Nuggets OR rotisserie chicken
4 cups spinach - chopped
4 cups Napa cabbage - chopped
Dressing to mix in salad
1 tsp minced ginger paste
1 tablespoon minced garlic
2 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon toasted sesame oil
2 tablespoons tahini paste
1 tablespoon Agave Nektar
Toppings
Shredded carrots
Snow peas
1 red bell pepper diced or sliced
1 avocado
4 hard boiled eggs
1/4 cup unsalted peanuts
Directions
Preheat oven to cook Realgood Nuggets
Bake nuggets for 18 minutes
Mix all dressing ingredients together well
Place spinach and cabbage in bottom of mixing bowl
Add dressing to salad and mix well
Divide into 4 bowls
Top with nuts, carrots, snow peas, bell pepper, avocado, 1 egg per salad
