Thai Salad

 

Thai Salad Ingredients - Serves 4

  • Realgood Chicken Nuggets OR rotisserie chicken

  • 4 cups spinach - chopped

  • 4 cups Napa cabbage - chopped

  • Dressing to mix in salad

    • 1 tsp minced ginger paste

    • 1 tablespoon minced garlic

    • 2 tablespoons low sodium soy sauce

    • 2 tablespoons rice wine vinegar

    • 1 tablespoon toasted sesame oil

    • 2 tablespoons tahini paste

    • 1 tablespoon Agave Nektar

  • Toppings

    • Shredded carrots

    • Snow peas

    • 1 red bell pepper diced or sliced

    • 1 avocado

    • 4 hard boiled eggs

    • 1/4 cup unsalted peanuts

Directions

  • Preheat oven to cook Realgood Nuggets

  • Bake nuggets for 18 minutes

  • Mix all dressing ingredients together well

  • Place spinach and cabbage in bottom of mixing bowl

  • Add dressing to salad and mix well

  • Divide into 4 bowls

  • Top with nuts, carrots, snow peas, bell pepper, avocado, 1 egg per salad

  • Enjoy!
