10 Minute Sweet & Savory Low Carb Coconut Shrimp Bowl Ingredients - 4 Servings

  • 1 lb shrimp - I purchase frozen "cooked" deveined tail off - thawed in fridge over night

  • 1 tablespoon Jamaican Jerk Seasoning

  • 2 tablespoons Coconut oil

  • 1 bag cauliflower rice

  • 1/2 cup green onion - chopped

  • 1/2 cup red bell pepper - diced

  • 1/4 cup coconut cream

  • Garnish:

    • Shredded coconut - 1 tablespoon per bowl

    • Optional: lime wedge + fresh cilantro

Directions

  • Heat cauliflower rice in the microwave for 5 minutes, then set on a paper towel when done to drain excess water

  • Heat 1 tablespoon olive oil in a pan

  • Add shrimp and Jamaican jerk seasoning, then simmer on medium for 5 minutes

  • In a separate pan, heat another tablespoon of coconut oil

  • Add peppers, onion, cauliflower rice, and coconut cream

  • Cook on medium heat for 5 minutes while your shrimp cooks

  • Place cauliflower rice in bowls, top with shrimp, coconut, lime, and cilantro

  • Enjoy!
