10 Minute Sweet & Savory Low Carb Coconut Shrimp Bowl Ingredients - 4 Servings
1 lb shrimp - I purchase frozen "cooked" deveined tail off - thawed in fridge over night
1 tablespoon Jamaican Jerk Seasoning
2 tablespoons Coconut oil
1 bag cauliflower rice
1/2 cup green onion - chopped
1/2 cup red bell pepper - diced
1/4 cup coconut cream
Garnish:
Shredded coconut - 1 tablespoon per bowl
Optional: lime wedge + fresh cilantro
Directions
Heat cauliflower rice in the microwave for 5 minutes, then set on a paper towel when done to drain excess water
Heat 1 tablespoon olive oil in a pan
Add shrimp and Jamaican jerk seasoning, then simmer on medium for 5 minutes
In a separate pan, heat another tablespoon of coconut oil
Add peppers, onion, cauliflower rice, and coconut cream
Cook on medium heat for 5 minutes while your shrimp cooks
Place cauliflower rice in bowls, top with shrimp, coconut, lime, and cilantro
