Spicy Pumpkin Burrata Chickpea Pasta Ingredients

  • 1 rotini Banza pasta box

  • 8 ounces burrata

  • 1/2 yellow onion - diced

  • 6 garlic cloves - minced

  • 1/2 cup pumpkin puree

  • 1/4 cup heavy cream

  • 1/4 parmesan cheese

  • 1 tbsp olive oil

  • 1 tsp red pepper flakes + small sprinkle on top of finished dish

Directions

  • Cook pasta per package directions

  • While pasta is cooking, heat olive oil in pan on medium heat

  • Once heated, add onion and cook 3 minutes

  • Add garlic and cook 2 minutes

  • Add red pepper flakes and cook 1 minute

  • Add pumpkin, heavy cream, and parmesan and stir well

  • Add drained pasta, mix well

  • Top with burrata and extra pepper flakes if desired

  • Enjoy!
