Spicy Pumpkin Burrata Chickpea Pasta Ingredients
1 rotini Banza pasta box
8 ounces burrata
1/2 yellow onion - diced
6 garlic cloves - minced
1/2 cup pumpkin puree
1/4 cup heavy cream
1/4 parmesan cheese
1 tbsp olive oil
1 tsp red pepper flakes + small sprinkle on top of finished dish
Directions
Cook pasta per package directions
While pasta is cooking, heat olive oil in pan on medium heat
Once heated, add onion and cook 3 minutes
Add garlic and cook 2 minutes
Add red pepper flakes and cook 1 minute
Add pumpkin, heavy cream, and parmesan and stir well
Add drained pasta, mix well
Top with burrata and extra pepper flakes if desired
