Sausage Stuffed Keto Acorn Squash Ingredients

  • Acorn squash - halved

  • 2 tbsp olive oil - divided

  • 1/2 yellow onion - diced

  • 1 garlic clove - minced

  • 1 lb Italian sausage meat

  • 2 tbsp parsley leaves - finely diced

  • 1/4 cup raisins

Directions

  • Preheat oven to 375F

  • Cut acorn squash in half, scoop out seeds, brush inside of each squash with 1/2 tbsp olive

  • Place acorn squash in oven for 40 minutes

  • In a large skillet heat 1 tbsp of olive oil on medium heat, add onion and minced garlic, sauté for 5 minutes

  • Push onion/garlic mixture to one side of skillet and then cook sausage in same skillet for approximately 10 minutes

  • Add fresh parsley into onion/garlic/sausage mixture and stir, then remove from heat

  • Mix in raisins

  • When acorn squash is fully roasted, top with mixture

  • Enjoy!
