Sausage Stuffed Keto Acorn Squash Ingredients
Acorn squash - halved
2 tbsp olive oil - divided
1/2 yellow onion - diced
1 garlic clove - minced
1 lb Italian sausage meat
2 tbsp parsley leaves - finely diced
1/4 cup raisins
Directions
Preheat oven to 375F
Cut acorn squash in half, scoop out seeds, brush inside of each squash with 1/2 tbsp olive
Place acorn squash in oven for 40 minutes
In a large skillet heat 1 tbsp of olive oil on medium heat, add onion and minced garlic, sauté for 5 minutes
Push onion/garlic mixture to one side of skillet and then cook sausage in same skillet for approximately 10 minutes
Add fresh parsley into onion/garlic/sausage mixture and stir, then remove from heat
Mix in raisins
When acorn squash is fully roasted, top with mixture
