Low Carb Peanut Salmon Bowl for 2 Ingredients

  • Sauce: heat in sauce pan for about 5 minutes on medium heat

    • 1/2 cup coconut milk

    • 3 tablespoons peanut butter

    • 1 tablespoon honey

    • 1 tablespoon low sodium soy sauce

    • 1 tablespoon minced garlic

    • 1 tsp minced ginger

    • 1 tsp rice wine vinegar

  • 1 bag riced cauliflower - heat in microwave, then place on paper towel after it’s done cooking and wring out water

  • 2 salmon filets

  • 1 head broccoli chopped

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Directions

  • Preheat oven to 400F

  • Place salmon on foil lined cookie sheet, then season with salt and pepper

  • Add fresh broccoli to sheet pan and sprinkle with olive oil

  • Cook in oven for 15 minutes

  • While salmon is cooking, make your sauce and cauliflower rice

  • Add a spoon full of sauce to salmon and cook another 3 minutes

  • Add cauliflower to bowls, top with salmon and broccoli

  • Drizzle with the remaining sauce

  • Sprinkle a tablespoon of peanuts on each dish

  • Enjoy!
