Low Carb Peanut Salmon Bowl for 2 Ingredients
Sauce: heat in sauce pan for about 5 minutes on medium heat
1/2 cup coconut milk
3 tablespoons peanut butter
1 tablespoon honey
1 tablespoon low sodium soy sauce
1 tablespoon minced garlic
1 tsp minced ginger
1 tsp rice wine vinegar
1 bag riced cauliflower - heat in microwave, then place on paper towel after it’s done cooking and wring out water
2 salmon filets
1 head broccoli chopped
1 tablespoon olive oil
Salt and pepper to taste
Directions
Preheat oven to 400F
Place salmon on foil lined cookie sheet, then season with salt and pepper
Add fresh broccoli to sheet pan and sprinkle with olive oil
Cook in oven for 15 minutes
While salmon is cooking, make your sauce and cauliflower rice
Add a spoon full of sauce to salmon and cook another 3 minutes
Add cauliflower to bowls, top with salmon and broccoli
Drizzle with the remaining sauce
Sprinkle a tablespoon of peanuts on each dish
