Low Carb High Protein Cottage Cheese Taco Enchiladas

 

Low Carb High Protein Cottage Cheese Taco Enchiladas Ingredients - 8 Servings

  • 1 lb lean ground beef

  • 1 packet low sodium taco seasoning

  • 1/4 cup water

  • 1 can corn

  • 1 can black beans

  • 1 cup cottage cheese

  • 1 cup freshly grated Monterey Jack cheese

  • 1 can green chilis

  • 8 Mission Low Carb Tortillas

  • 1/2 cup enchilada sauce

  • 1 cup freshly grated cheddar cheese

Directions

  • Preheat oven to 350F

  • Cook your ground beef in a skillet until cooked throughout

  • Add your taco seasoning and 1/4 cup water

  • Cook corn and black beans in microwave for 3 minutes to soften, then drain

  • Blend cottage cheese in blender

  • Add blended cottage cheese and Monterey Jack to a bowl and microwave for 1 minute, then stir together

  • Add green chilis to bottom of baking dish

  • Spread about a tablespoon of the cottage cheese mixture on each tortilla, add ground beef, corn, and black beans

  • Roll each tortilla and place in dish

  • Top with remaining cottage cheese mixture

  • Top with enchilada sauce and sprinkle cheddar cheese on top

  • Bake in for 30 minutes

  • ***I top mine with tomatoes and a wholly avocado packet

  • Enjoy!
