Keto Chicken Piccata Ingredients

  • 1 lb boneless chicken breast tenders

  • 4 tbsp butter

  • 2 tbsp olive oil

  • 1/4 cup parmesan cheese

  • 1 cup chicken bone broth

  • 1/4 cup lemon juice

  • 2 tbsp minced garlic

  • (1) 16 ounce jar of capers - drained

  • Fresh parsley

  • Salt

  • Pepper

Directions

  • Season chicken with salt and pepper

  • Heavily coat chicken with parmesan cheese like you would if using bread crumbs

  • Heat 2 tbsp butter and 2 tbsp olive oil in skillet over medium heat

  • Cook chicken on both sides for 3 minutes each and set aside once cooked

  • Using the same pan add bone broth, lemon juice, capers, minced garlic, and 2 tbsp butter and let simmer until sauce reduces

  • Spoon sauce over chicken and sprinkle with fresh parsley

  • Serve with sautéed spinach or any veggie you prefer for the perfect low carb meal
