Keto Chicken Piccata Ingredients
1 lb boneless chicken breast tenders
4 tbsp butter
2 tbsp olive oil
1/4 cup parmesan cheese
1 cup chicken bone broth
1/4 cup lemon juice
2 tbsp minced garlic
(1) 16 ounce jar of capers - drained
Fresh parsley
Salt
Pepper
Directions
Season chicken with salt and pepper
Heavily coat chicken with parmesan cheese like you would if using bread crumbs
Heat 2 tbsp butter and 2 tbsp olive oil in skillet over medium heat
Cook chicken on both sides for 3 minutes each and set aside once cooked
Using the same pan add bone broth, lemon juice, capers, minced garlic, and 2 tbsp butter and let simmer until sauce reduces
Spoon sauce over chicken and sprinkle with fresh parsley
Serve with sautéed spinach or any veggie you prefer for the perfect low carb meal
