Keto Candied Pecan No Bake Cheesecake Ingredients

  • Keto Cheesecake filling:

    • 16oz cream cheese softened

    • 1/3 cup monk fruit sweetener

    • 1 tsp vanilla extract

    • 1 tsp cinnamon

    • 1 cup heavy whipping cream

  • Pie crust:

    • I used Diamond pre-made Pecan pie crust BUT you are welcome to make the crust keto by using my crust from my regular keto cheesecake

  • Keto Pecan Topping:

    • 4 tbsp butter

    • 2 tbsp heavy whipping cream

    • 1/2 cup Stevia Zero Calorie Brown Sugar

    • 1/2tsp vanilla extract

    • 2 cups whole pecan halves

Directions

  • Filling:

    • Mix all ingredients in mixer until fluffy

    • Then spread into pie crust

  • Pecan Topping:

    • In a saucepan over medium heat, melt the butter, add the brown sugar, and stir until darker in color

    • Turn off heat, add vanilla, and pecans

    • Stir well and top on cheesecake filling

  • Refrigerate overnight 

  • Enjoy!
