Keto Candied Pecan No Bake Cheesecake Ingredients
Keto Cheesecake filling:
16oz cream cheese softened
1/3 cup monk fruit sweetener
1 tsp vanilla extract
1 tsp cinnamon
1 cup heavy whipping cream
Pie crust:
I used Diamond pre-made Pecan pie crust BUT you are welcome to make the crust keto by using my crust from my regular keto cheesecake
Keto Pecan Topping:
4 tbsp butter
2 tbsp heavy whipping cream
1/2 cup Stevia Zero Calorie Brown Sugar
1/2tsp vanilla extract
2 cups whole pecan halves
Directions
Filling:
Mix all ingredients in mixer until fluffy
Then spread into pie crust
Pecan Topping:
In a saucepan over medium heat, melt the butter, add the brown sugar, and stir until darker in color
Turn off heat, add vanilla, and pecans
Stir well and top on cheesecake filling
Refrigerate overnight
