High Protein Low Carb Banh Mi Bowl Ingredients

  • 1 lb Pork

  • 4 garlic cloves - minced

  • 1 cucumber - sliced

  • 2 cups shredded carrots

  • 1 jalapeño - sliced

  • 1 tbsp arrowroot

  • 1 tsp grated ginger

  • 1/4 cup coconut aminos

  • 1/4 cup mayonnaise

  • 2 tsp Sriracha

  • 1 bag of Banza rice

  • Cilantro for garnish

Directions

  • Cook Banza rice per package directions

  • Cook pork in saute pan

  • While pork is cooking, mince garlic, slice cucumber and jalapeños

  • Whisk arrowroot, coconut aminos, and ginger together

  • For spicy mayo mix mayonnaise and Sriracha together

  • Add garlic and coconut amino sauce to pork and sauté for 2 minutes

  • Assemble bowl by adding Banza rice to bottom of bowl, pork, and vegetables

  • Add spicy mayo and garnish with cilantro

  • Enjoy!
