High Protein Cottage Cheese Sauce Sweet Potato Mexican Nachos for 4 Ingredients

  • 1 sweet potato - cut into thick rounds

  • 1 can Rotel - drain liquid

  • 1 lb lean ground beef

  • Salt & pepper to taste

  • 1 tablespoon olive oil

  • 1 cup cottage cheese

  • 1/2 cup fresh shredded cheddar cheese

  • 4 Wholly Guacamole avocado packets

  • 1 packet low sodium taco seasoning

Directions

  • Preheat oven to 425F

  • Slice sweet potato into thick rounds

  • Spray foil lined cookie sheet with olive oil spray

  • Place sweet potatoes on the pan, brush with olive oil, sprinkle with salt and pepper to taste

  • Bake for 40 minutes to get the perfect chip like texture

  • Heat skillet on medium heat

  • Cook meat on skillet, then add taco seasoning and Rotel

  • Blend cottage cheese in a blender

  • Add cheddar cheese to the cottage cheese and microwave for 1 minute, then stir well

  • Add sweet potato rounds to a plate, top with ground beef and drizzle with cottage cheese dressing

  • Top each plate with a Wholly Guacamole packet or fresh avocado

  • Enjoy!
