High Protein Cottage Cheese Sauce Sweet Potato Mexican Nachos for 4 Ingredients
1 sweet potato - cut into thick rounds
1 can Rotel - drain liquid
1 lb lean ground beef
Salt & pepper to taste
1 tablespoon olive oil
1 cup cottage cheese
1/2 cup fresh shredded cheddar cheese
4 Wholly Guacamole avocado packets
1 packet low sodium taco seasoning
Directions
Preheat oven to 425F
Slice sweet potato into thick rounds
Spray foil lined cookie sheet with olive oil spray
Place sweet potatoes on the pan, brush with olive oil, sprinkle with salt and pepper to taste
Bake for 40 minutes to get the perfect chip like texture
Heat skillet on medium heat
Cook meat on skillet, then add taco seasoning and Rotel
Blend cottage cheese in a blender
Add cheddar cheese to the cottage cheese and microwave for 1 minute, then stir well
Add sweet potato rounds to a plate, top with ground beef and drizzle with cottage cheese dressing
Top each plate with a Wholly Guacamole packet or fresh avocado
