Cheesy Beefy Sweet Potato Zucchini Bake Ingredients

  • 1 lb ground beef

  • 1 sweet potato - peeled & diced

  • 1 zucchini - diced

  • 1/4 cup parmesan cheese - shredded

  • 2 tsp garlic powder - divided

  • 2 tsp rosemary - divided

  • 1 tbsp olive oil

Directions

  • Preheat oven to 400F

  • Add peeled diced sweet potatoes to baking dish, 1 tsp rosemary, 1 tsp garlic powder, olive oil and mix with hands

  • Cook in oven for 30 minutes

  • While that cooking, ground up your beef

  • Once cooked, add 1 tsp garlic powder and 1 tsp of rosemary and mix well

  • Add in the diced zucchini.

  • Mix the meat mixture with the sweet potatoes and cook another 10 minutes in the oven

  • Add parmesan cheese on top and cook another 10 minutes

  • Enjoy!
