Cauliflower Sage Chicken Sausage Gnocchi

 

Cauliflowers Sage Chicken Sausage Gnocchi Ingredients - 4 Servings

  • 1 tablespoon olive oil

  • 1 yellow onion - chopped

  • 2 cloves garlic - minced

  • 1 package chicken sausage smoked sausage - cut into rounds

  • 1/2 cup low sodium chicken broth

  • 1 can 14.5 ounce fire-roasted diced tomatoes

  • 1 teaspoon Thyme

  • 1/2 teaspoon Rosemary

  • 1/2 teaspoon Sage

  • 1/2 teaspoon Parsley Flakes

  • 1/2 teaspoon Garlic Powder

  • 1 package 16 ounce cauliflower gnocchi - uncooked

  • 4 cup fresh spinach

  • 1/2 cup freshly grated Parmesan cheese

Directions

  • Preheat oven to 425F

  • In a skillet heat olive oil on medium heat

  • Add onion and cook for 2 minutes

  • Add garlic and sausage, then cook for 5 minutes

  • Add broth, tomatoes, spices, and spinach, then mix well

  • Add gnocchi and mix well

  • Top with cheese

  • Cook in oven for 20 minutes

  • Enjoy!
