Cauliflower Loaded “Twice Baked Potato” Casserole Ingredients

  • 1 head cauliflower

  • 4 sliced bacon

  • 1/4 cup cottage cheese

  • 1/4 cup Mayo

  • 1/2 cup sour cream

  • 2 tbsp olive oil

  • 1/4 cup shredded Colby Jack cheese

  • 1/4 cup shredded cheddar cheese

  • 1 tbsp chopped chives

  • 1 tbsp ranch seasoning

Directions

  • Preheat oven to 350F

  • Cut up cauliflower and drizzle with olive oil, then roast for 15 minutes

  • While the cauliflower is cooking place bacon strips in the microwave for 6 minutes OR you can pan fry

  • Crumble bacon when done - you can also use bacon bits for less prep

  • Mix together cottage cheese, mayo, sour cream, shredded Colby Jack cheese, and ranch seasoning

  • Add bacon and cauliflower once cooked and mix well

  • Add to baking dish and sprinkle shredded cheddar and fresh chives on top

  • Cover with foil and cook for 15 minutes

  • Uncover and cook for 10 minutes

  • Enjoy!
