Butternut Squash Soup Ingredients

  • 16 oz Vegestable broth

  • 1 tsp nutmeg

  • 1 tsp cinnamon

  • 1/4 cup sugar free maple syrup

  • 1 butternut squash

  • 1 yellow onion

  • 4 cloves garlic

  • 1 tsp pepper

  • 1 tsp garlic salt

  • 2 tbsp olive oil

Directions

  • Preheat oven to 400F

  • Cut up butternut squash & onion

  • Lay on sheet pan with whole garlic cloves

  • Sprinkle pepper and garlic salt

  • Apply olive oil and mix with hands

  • Roast for 15 minutes - remove the garlic - cook butternut squash and onion for another 15 minutes

  • Add cooked garlic butternut squash and onion to blender

  • Add broth, nutmeg, cinnamon, syrup and blend for 2 minutes

  • Enjoy!
