Butternut Squash Soup
Butternut Squash Soup Ingredients
16 oz Vegestable broth
1 tsp nutmeg
1 tsp cinnamon
1/4 cup sugar free maple syrup
1 butternut squash
1 yellow onion
4 cloves garlic
1 tsp pepper
1 tsp garlic salt
2 tbsp olive oil
Directions
Preheat oven to 400F
Cut up butternut squash & onion
Lay on sheet pan with whole garlic cloves
Sprinkle pepper and garlic salt
Apply olive oil and mix with hands
Roast for 15 minutes - remove the garlic - cook butternut squash and onion for another 15 minutes
Add cooked garlic butternut squash and onion to blender
Add broth, nutmeg, cinnamon, syrup and blend for 2 minutes
