Butternut Squash Turkey Goat Cheese SPICY Skillet Ingredients

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1 tsp cayenne

  • 2 tablespoon olive oil - divided

  • 1/2 butternut squash - cubed

  • 1 lb ground turkey

  • 6oz bag fresh spinach

  • 1/2 yellow onion - diced

  • 6 garlic cloves - minced

  • 2 oz goat cheese

  • 1/2 cup water

Directions

  • Preheat oven to 350F

  • Cook cubed butternut squash with one tablespoon olive oil in the oven for 25 minutes

  • Heat 1 tablespoon olive oil in a skillet

  • Add diced onions and garlic, then cook for 3 minutes on medium heat

  • Add ground turkey and cook all the way

  • Add paprika, cumin, and cayenne once meat is cooked

  • Add water & spinach and let wilt for 3 minutes roughly

  • Add cooked butternut squash

  • Top with goat cheese crumbles

  • Enjoy!
