Winter Bleu Cheese Cranberry Vegetable Salad Ingredients
2 cups chopped brussel sprouts - quartered
2 cups chopped sweet potato
1 shallot - thinly sliced
1/4 cup chopped walnuts
1/4 cup dried cranberries
1/4 cup bleu cheese
2 tablespoons olive oil
2 tablespoon garlic powder
Maple Dijon Dressing:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar free maple syrup
Directions
Maple Dijon Dressing:
Mix all ingredients together
Preheat oven to 425F
Place brussels, sweet potato, and shallots on a sheet pan
Drizzle with olive oil
Sprinkle with garlic powder
Toss well
Cook veggies for 15 minutes, then flip and cook for 10 more minutes
Toss with walnuts, cranberries, bleu cheese, and drizzle dressing on top
***So good with a steak and salmon or any meat really!!!
