Winter Bleu Cheese Cranberry Vegetable Salad Ingredients

  • 2 cups chopped brussel sprouts - quartered

  • 2 cups chopped sweet potato

  • 1 shallot - thinly sliced

  • 1/4 cup chopped walnuts

  • 1/4 cup dried cranberries

  • 1/4 cup bleu cheese

  • 2 tablespoons olive oil

  • 2 tablespoon garlic powder

  • Maple Dijon Dressing:

    • 2 tablespoons olive oil

    • 1 tablespoon balsamic vinegar

    • 1 tablespoon Dijon mustard

    • 1 tablespoon sugar free maple syrup

Directions

  • Maple Dijon Dressing:

    • Mix all ingredients together

  • Preheat oven to 425F

  • Place brussels, sweet potato, and shallots on a sheet pan

  • Drizzle with olive oil

  • Sprinkle with garlic powder

  • Toss well

  • Cook veggies for 15 minutes, then flip and cook for 10 more minutes

  • Toss with walnuts, cranberries, bleu cheese, and drizzle dressing on top

  • ***So good with a steak and salmon or any meat really!!!
