Sweet and Savory Apple, Squash, Sausage Casserole Ingredients

  • 1 lb Italian sausage

  • 2 cups chopped fresh butternut squash cubes

  • 2 cups diced honey crisp apple (1 apple)

  • 1/4 cup died yellow onion chopped

  • 1/2 cup fennel bulb chopped

  • 2 tbsp sugar free maple syrup

  • Dash of cinnamon (about 1/2 tsp)

  • 1 cup Swiss & gruyere cheese blend

  • 1/2 tsp marjoram

  • 1/2 tsp sage

  • 1 tbsp olive oil

Directions

  • Preheat oven at 400F

  • Coat diced butternut squash & diced apple with sugar free syrup and cinnamon, then bake for 25 minutes

  • While squash and apple is baking, heat olive oil in skillet on medium heat

  • Add Italian sausage and cook till browned

  • Push to side of pan, and add fennel & onion

  • Sauté on medium low heat till onion looks caramelized

  • Add sage and marjoram, apples, and butternut squash

  • Mix well

  • Sprinkle cheese on top

  • Enjoy!
