Sundried Tomato Chicken Salad

 

Sundried Tomato Chicken Salad Ingredients - 4 Servings

  • 1 lb chicken - cooked and shredded

  • 1/4 cup green onion - chopped

  • 2 tbsp parsley

  • 1/4 cup sundried tomato

  • 2 tbsp capers

  • 1/2 cup olive oil mayonnaise

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 2 tsp white vinegar

  • 4 rice cakes

Directions

  • Preheat oven to 400F

  • Cook chicken in oven for 25 minutes

  • Shred cooked chicken

  • Mix all ingredients together and top on rice cakes

  • Enjoy!
