Low Carb Pork Rind Nachos for One Ingredients
Taco Meat
1/4-½ pound lean ground beef
1 tbsp low sodium taco seasoning
For the Nachos
(2) cups pork rinds
(1/4) cup shredded cheddar cheese
Suggested Toppings (All Optional)
Guacamole
Jalapeños
Cherry tomatoes
Chopped fresh cilantro
Sour cream or Greek yogurt
Directions
Preheat oven to 350F
Cook meat in skillet - add taco seasoning
Place meat on pork rinds and sprinkle with cheese
Cook for 12 minutes in oven (microwave works too if you are in a pinch)
Place desired topping on nachos
