Low Carb Pork Rind Nachos for One Ingredients

  • Taco Meat

    • 1/4-½ pound lean ground beef

    • 1 tbsp low sodium taco seasoning

  • For the Nachos

    • (2) cups pork rinds

    • (1/4) cup shredded cheddar cheese

  • Suggested Toppings (All Optional)

    • Guacamole

    • Jalapeños

    • Cherry tomatoes

    • Chopped fresh cilantro

    • Sour cream or Greek yogurt

Directions

  • Preheat oven to 350F

  • Cook meat in skillet - add taco seasoning

  • Place meat on pork rinds and sprinkle with cheese

  • Cook for 12 minutes in oven (microwave works too if you are in a pinch)

  • Place desired topping on nachos

  • Enjoy!
