High Protein Lower Carb Pad Thai
High Protein Lower Carb Pad Thai Ingredients - 4 Servings
Sauce: mix all together
2 tablespooons sugar free ketchup
2 tablespoons Agave Nekter
2 tablespoons pb 2 powder
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 tablespoon water
2 cups shredded carrots
2 cups bean sprouts
1/4 cup unsalted peanuts
1/4 cup chopped green onion
1 box Banza spaghetti cooked and drained
1/2 pound cooked shredded chicken
1 tablespoon minced garlic
1 tablespoon olive oil
2 eggs - beaten
Directions
Preheat oven to 400F
Cook Banza per package directions
Cook chicken in oven for 20 minutes and shred OR use rotisserie chicken
Mix ingredients for sauce and set aside
Heat olive oil on medium heat , add garlic & carrots, then cook for 5 minutes
Add cooked chicken & pasta and mix well
Add bean sprouts & sauce & push to side of pan
Add egg & cook for 2 minutes, mix it all together
Add peanuts & mix
Sprinkle with green onion
*** NOTE: you can double the sauce recipe to make it extra saucy ;)
