High Protein Lower Carb Pad Thai

 

High Protein Lower Carb Pad Thai Ingredients - 4 Servings

  • Sauce: mix all together

    • 2 tablespooons sugar free ketchup

    • 2 tablespoons Agave Nekter

    • 2 tablespoons pb 2 powder

    • 1 tablespoon rice vinegar

    • 1 tablespoon soy sauce

    • 1 tablespoon water

  • 2 cups shredded carrots

  • 2 cups bean sprouts

  • 1/4 cup unsalted peanuts

  • 1/4 cup chopped green onion

  • 1 box Banza spaghetti cooked and drained

  • 1/2 pound cooked shredded chicken

  • 1 tablespoon minced garlic

  • 1 tablespoon olive oil

  • 2 eggs - beaten

Directions

  • Preheat oven to 400F

  • Cook Banza per package directions

  • Cook chicken in oven for 20 minutes and shred OR use rotisserie chicken

  • Mix ingredients for sauce and set aside

  • Heat olive oil on medium heat , add garlic & carrots, then cook for 5 minutes

  • Add cooked chicken & pasta and mix well

  • Add bean sprouts & sauce & push to side of pan

  • Add egg & cook for 2 minutes, mix it all together

  • Add peanuts & mix

  • Sprinkle with green onion

  • *** NOTE: you can double the sauce recipe to make it extra saucy ;)
