High Protein Low Carb Butternut Squash Cottage Cheese Chickpea Pasta for 2 Ingredients
1/2 butternut squash - roughly chopped (you can roast the other 1/2 for another recipe OR double this recipe and use the entire squash)
5 cloves garlic
1 tbsp olive oil
Salt to taste
Black pepper to taste
1 tsp garlic powder
1/2 cup cottage cheese
1 - 8oz box rotini Banza pasta
1/2 cup pasta water - utilize the water you cooked the Banza pasta in
1/2 cup vegetable broth
1/2 cup shredded parmesan - 1/4 cup for each bowl
3 leaves fresh Basil - finely chopped
Directions
Preheat oven to 400 degrees.
Add butternut squash and garlic to a sheet pan, then cover in olive oil
Toss in salt, pepper and garlic powder using your hands
Roast for 30 minutes, removing the garlic after 15 minutes
Add cooked butternut squash and garlic to a blender along with vegetable broth, pasta water and cottage cheese
Blend until smooth (I blended it for about 2 minutes)
Toss sauce with pasta, top with Parmesan and basil
