High Protein Low Carb Butternut Squash Cottage Cheese Chickpea Pasta for 2 Ingredients

  • 1/2 butternut squash - roughly chopped (you can roast the other 1/2 for another recipe OR double this recipe and use the entire squash)

  • 5 cloves garlic

  • 1 tbsp olive oil

  • Salt to taste

  • Black pepper to taste

  • 1 tsp garlic powder

  • 1/2 cup cottage cheese

  • 1 - 8oz box rotini Banza pasta

  • 1/2 cup pasta water - utilize the water you cooked the Banza pasta in

  • 1/2 cup vegetable broth

  • 1/2 cup shredded parmesan - 1/4 cup for each bowl

  • 3 leaves fresh Basil - finely chopped

Directions

  • Preheat oven to 400 degrees.

  • Add butternut squash and garlic to a sheet pan, then cover in olive oil

  • Toss in salt, pepper and garlic powder using your hands

  • Roast for 30 minutes, removing the garlic after 15 minutes


  • Add cooked butternut squash and garlic to a blender along with vegetable broth, pasta water and cottage cheese

  • Blend until smooth (I blended it for about 2 minutes) 


  • Toss sauce with pasta, top with Parmesan and basil

  • Enjoy!
