High Protein Cottage Cheese Broccoli Chicken Cheese Stuffed Sweet Potato Ingredients - 4 Servings
2 sweet potatoes
1 lb chicken tenders
1 head broccoli
4 tablespoons Calorie Free Walden Farms Ranch
1 cup cottage cheese - blended in blender
1 cup freshly grated cheddar cheese
1 tablespoon olive oil
Directions
Preheat oven to 425F
Stab potatoes with fork, then place on lined baking dish and cook for 50 minutes
On another lined baking sheet, add chicken tenders and chopped broccoli head
Add olive oil to broccoli
Roast at 425 for 20 minutes
Shred chicken with 2 forks
Blend cottage cheese, add cheddar cheese to cottage cheese, and microwave for one minute, stir well
Add cooked shredded chicken and broccoli to cottage cheese sauce, mix well
Cut sweet potatoes in 1/2, top sweet potatoes with chicken mixture
Drizzle each potato 1/2 with 1 tablespoon Walden Farms
