Cottage Cheese Green Chicken Chili Verde Ingredients

  • 1 lb chicken breast

  • 1 cup cottage cheese

  • 1 can (4oz) green chiles

  • 1 tbsp taco seasoning

  • 1/2 cup salsa verde

  • 1 tbsp diced green onion

  • 1 cup Colby Jack Monterey Cheese - shredded

Directions

  • Preheat oven at 400F

  • Place chicken breast in a glass casserole dish and bake for 20 minutes

  • Shred chicken in the same glass pan with 2 forks once cooked

  • In a bowl mix cottage cheese, green chiles, taco seasoning, and salsa verde

  • Add mixture to top of shredded chicken.

  • Top with shredded cheese & sprinkle with diced green onion

  • Enjoy!
