5 Ingredient ButterNUT Squash

 

5 Ingredients

  • 4 ounces softened cream cheese

  • 2 slices of cooked bacon - crumble

  • 1/2 cup of grated parmesan cheese

  • 1 bag of fresh spinach

  • 1 Butternut Squash

Directions

  • Cut Butternut Squash length wise and scrape out guts

  • Brush inside of Butternut Squash with olive oil

  • Sprinkle Butternut Squash with salt and pepper

  • Roast Butternut Squash in oven at 400F for 40 minutes

  • Sautee spinach in sauce pan with 1 tbsp of olive oil

  • Combine bacon, parmesan cheese, cream cheese with your spinach and mix well

  • Scoop out a little bit of the Butternut Squash so there is room for the filling

  • Add the spinach mixture

  • Roast Butternut Squash in oven at 400F for an additional 15 minutes

  • Enjoy!
